You may find a caterer that will allow you to bring your own wine and spirits. They may only charge you a corkage fee for wine served during dinner. If this is the case, choose a wine and spirit supplier who will buy back your unopened bottles, often referred to as a "buyback policy".
Another way to save money would be to cut down the number of courses. Maybe even consider offering a buffet instead of sit down meal. This requires fewer catering staff and may allow you to add other items to your menu.
Instead of dinner, serve lunch, brunch, or even just a dessert reception. Skip the hors d'oeuvres altogether and pile self-serve cocktail tables high with beautiful cheeses, breads and fresh fruits.
Formal vs. Casual
Fine china or other fancy serving ware costs more. Consider a more casual themed event. Guests appreciate delicious food served on a sturdy plate more than inferior foods served in the most dazzling setting.
Your menu should be chosen carefully, and work with your caterer closely. Keep away from high priced ingredients and labor intensive dishes. With this in mind, you will be well on your way to a spectacular event, with great pricing.
